Apple Turnovers

These mini apple turnovers are delicious and perfect for morning or afternoon tea and parties. I cheated and used tinned pie apple but you can make them from scratch if you like.

Apple Turnovers
Makes 16 mini size
  • 800g tinned apple drained*
  • 1 teaspoon ground cinnamon
  • 2 tablespoons caster sugar
  • 4 sheets puff pastry thawed
  • Icing sugar
  • 1 egg whisked
  • 1/4 cup milk

1. Preheat oven to 180°c (160° fanforced). Combine the apple, cinnamon and sugar in a mixing bowl and stir gently until combined. Whisk egg and milk together to creat an eggwash.
2. Cut four circles out of each sheet of pastry. You can do any size you'd like. I ran a butter knife around a 11.5cm rice bowl.
3. Spoon 1 tablespoon of mixture in the middle of each pastry round, being careful not to overfill because they will burst open whilst cooking. Brush a small amount of eggwash on one edge of the pastry round. Fold pastry over and seal the edge with a fork. Place onto a lined baking tray and brush with eggwash. Repeat until you have 16 turnovers in total. I used two baking trays and baked eight on each.
4. Bake in oven for approx 20 minutes or until puffed and golden. Allow to sit for 10 minutes and dust with icing sugar before serving.

*I had about 1 cup of apple mixture left over and ended up making apple pikelets with it. You could also add it to porridge or have with yogurt!
