Cheesy Smashed Potatoes

I needed something easy to cook tonight as I got home from food shopping just after 5.30. I haven't made a meal plan for this week as I had the kids home for Easter Monday and then they had a pupil free day on Tuesday! My week has been all out of routine but I look forward to getting back on track.

I have a 5kg bag of potatoes that need to be used, so I decided to experiment and came up with cheesy smashed potatoes. I guess they are a lazy version of stuffed potatoes! They turned out delicious.

Cheesy Smashed Potatoes

  • 1kg small or baby potatoes (I did three for adults, two for kids) 
  • Olive oil
  • Garlic powder
  • Salt and pepper
  • Tasty cheese grated
  • Parmesan cheese grated
1. Preheat oven to 180°c fanforced (200° without fan). Boil potatoes until they are fork tender. Drain. Lay onto baking tray and smash with a potato masher, gently, just enough to flatten the potato.
2. Drizzle some olive oil on each potato. Season with salt and pepper. Sprinkle some garlic powder on each potato and then top with cheeses.
3. Bake in oven until cheese is golden. Approx 20 minutes.
