Chicken Carbonara

I love this recipe because it's all cooked in the same pot, besides the pasta, which makes it super quick to whip together. Yum!

Chicken Carbonara
Serves 6

• 1 brown onion diced
• 4 garlic cloves crushed
• 1 red capsicum diced
• 1 punnet sliced mushrooms
• 250g bacon diced
• 600g chicken breast cubed
• 500g fettucine
• 400ml light thickened cream
• 3 tablespoons grated parmesan cheese (1tbl spoon put aside for garnishing)
• Fresh Parsley chopped (optional)
• Olive oil
• Salt and pepper

1. Boil pasta until al dente. Put aside. Meanwhile heat a tablespoon of oil in frying pan and cook onion until it starts to soften. Add garlic, capsiscum, bacon, mushrooms and chicken. Cook until chicken has browned.
2. Add cream and bring to a simmer. Add two tablespoons of parmesan and salt and pepper to taste. Stir. Allow to simmer for approx ten minutes or until it starts to thicken.
3. Stir parsley through last minute. Pour chicken mixture into pot of pasta and stir. Sprinkle parmesan on top before serving.
