Chicken Chow Mein

A quick weeknight meal with lots of flavour. My kids love these kind of noodles!

Chicken chow mein
Serves 6

• 600g chicken breast cut into strips
• 400g Changs egg noodles (or any noodles of choice)
• 1/2 cabbage shredded
• 2 medium carrots cut into thin batons
• 1 onion cut into half moons
• 4 garlic cloves crushed
• 1 teaspoon ginger
• 2 tablespoon salt reduced soy sauce
• 1 1/2 tablespoons oyster sauce
• Pepper for seasoning
• Oil

1. Heat oil in pan over high heat and add onion. Cook for 3 minutes. Turn heat down slightly and add garlic, ginger and carrot. Cook for 3 minutes. Cover with lid and allow to cook for 5 minutes.
2. Turn temp back up to high and add chicken. Cook until browned. Add sauces and season with pepper. In the meantime boil noodles per packet instructions and put aside.
3. Add cabbage and stir. Cook for approx 10 minutes or until cooked. Add noodles and stir through. Serve.
