Cottage Pie



We love cottage pie! Budget friendly and simple to make. Great for hiding veg and bulking out with lentils.

Cottage Pie
Serves 6

  • 500g lean beef mince
  • 1 brown onion diced
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tin crushed tomatoes
  • 2 garlic cloves crushed
  • 2 tablespoons tomato sauce
  • 1 tablespoon worcestershire sauce
  • 2 cups frozen peas, corn and carrot mix
  • 1 1/2 cups beef stock
  • 2 cups of grated tasty cheese
  • 2 tablespoons gravy powder
  • Oil
  • 2kg potatoes peeled and cubed
  • 3/4 cup milk
  • 40g butter

1. Preheat oven to 200°c (180° fanforced) Boil potatoes until soft. Mash and add milk and butter. Season with salt and pepper. Set aside.
2. Heat 1 tablespoon of oil over a medium heat and fry onion for 5 minutes. Turn the heat up and brown off the mince and garlic. Add the vegetables, sauces, thyme and bay, tomatoes, water and season with salt and pepper. Stir. Bring to a simmer and reduce the heat. Allow to simmer for approx 30 minutes or until it has thickened and veg is cooked.
3. Remove bay leaves and add the gravy powder and stir. Place mixture into large baking dish and top with mash. Sprinkle cheese on top and bake in the oven for 20 minutes or until cheese is golden.
