Easy Mince Chow Mein

A huge hit in this house and super easy!

Mince Chow Mein
Serves 8+

• 500g lean beef mince
• 1 brown onion chopped
• 2-3 carrots peeled and chopped
• 1/2 cabbage shredded
• 1 cup corn kernels
• 4 cloves of garlic crushed
• 1 tablespoon oyster or soy sauce
• 2 teaspoons curry powder (more or less to taste)
• 1 cup rice (brown or white)
• 4 cups hot water (add more if needed)

1. Fry onion and garlic for two minutes in a bit of vegetable oil over a medium heat in a large pot. Add mince and cook until brown.
2. Add all the other ingredients and stir. Bring to a gentle simmer.
3. Simmer with lid on until rice and veg are cooked, (approx 30 minutes) stirring occasionally.

You could use pork or chicken mince instead of beef and add more veges of choice. This recipe yields at least 8 serves.
