Fried Rice

This recipe makes a bulk load of fried rice but I always like to have leftovers for lunch. One of our families faves!

  • 4 cups cooked white rice (preferrably a day old)
  • 1 brown onion chopped
  • 4 cloves of garlic crushed
  • A couple of pinches of chinese five spice
  • 1 teaspoon minced ginger
  • 3 cups mixed veg (peas, carrot, corn)
  • 300g bacon diced
  • 1/4 cup soy sauce (low sodium if preferred)
  • 1 tablespoon oyster sauce
  • Vegetable oil
  • Black pepper for seasoning
1. Heat a tablespoon of oil in a wok (I use a flat bottomed wok as I cook on electric) over medium high heat and add onion. Cook for a few minutes then add bacon, garlic, ginger and mixed veg. Cook until vegetables start to soften.
2. Add cooked rice and break up with a wooden spoon as you go. Add sauces and chinese five spice. Season black pepper. Stir well to combine.
3. Once the rice has heated up and the veges are soft it is ready.
