Hidden Veg Sausage Rolls

These sausage rolls are great for lunches and parties. Very versatile too as you can pick what meat and veg you use!

Hidden Veg Sausage rolls
Makes 40 party-size sausage rolls

• 1kg sausage mince of choice
• 1/2 cup breadcrumbs
• 2 tablespoons tomato chutney or sauce of choice
• 2 teaspoons garlic powder
• 1 onion finely diced
• 1 cup of grated/finely chopped/blitzed veg of choice (carrot, zucchini, celery, mushroom, capsicum, broccoli, cauliflower ect)
• Salt and pepper for seasoning
• 2 teaspoons dried thyme
• 4 sheets Coles puff pastry
• 1 egg whisked

1. Pre-heat oven to 200°. Combine sausage mince, breadcrumbs, onion, veg, egg, herbs, season with salt and pepper and mix until well combined. 
2. Slice thawed pastry down the middle. Spoon sausage mixture onto pastry, approx 3/4 inch wide, leaving 2cms of pastry on one side to seal with. Sprinkle water on 2cm overhang to help seal the pastry. Fold pastry over and press gently to seal. Cut desired size.
3. Cook in oven for approx 20 minutes or until pastry is golden.
