Mexican Tortilla Lasagne



This lasagne is easy to put together and it's also delicious!

Mexican Lasagne
Serves 8

• 1kg beef mince
• 1 large brown onion diced
• 1 red capsicum diced
• 1 green capsicum diced
• 1 can red kidney beans drained
• 1 can corn kernels drained
• 1 cup water
• 1 can crushed tomatoes
•  8 flour tortillas
• 1 jar salsa of choice
• 1 cup grated cheese
• Olive oil

Seasoning


  • 2 tablespoons ground paprika 
  • 1 tablespoon garlic powder
  • 3 teaspoons ground cumin
  • 3 teaspoons ground coriander
  • 1/2 teaspoon chili powder (more or less to taste)
  • Salt and pepper

1. Heat oil in pan on medium heat and add onion. Cook until it starts to soften. Add mince and cook until browned.
2. Add capsicum, beans, corn, tomatoes, seasoning, water and stir. Bring to simmer and allow to cook for approx 30 minutes stirring every so often.
3. Meanwhile preheat oven to 180°c. Cut tortillas to fit into a rectangular baking dish (I cut approx an inch off one side of the tortillas and laid the straight edges at the end of the dish and the offcuts in the middle).
4. Start with a tortilla layer and then add a mince layer. Keep adding layers finishing with a tortilla layer. Add the jar of salsa on top and spread evenly. Finish with grated cheese. Bake in oven until cheese is golden. Allow to stand for 10 mins before serving
