Mini Bacon & Cheese Quiches

These mini quiches are great for morning and afternoon tea or school lunches.

Mini Bacon & Cheese Quiches
Makes 24
  • 3 sheets ready rolled shortcrust pastry thawed
  • 2 rindless middle bacon rashers finely diced
  • 2 small brown onions finely diced
  • 1/2 cup grated tasty cheese
  • 1/2 teaspoon garlic powder
  • 3 eggs
  • 1/2 cup milk
  • Salt and pepper for seasoning
  • Olive oil

1. Preheat oven to 180°c fanforced. Add a tablespoon of olive oil to a frying pan and cook onion over medium high heat for a couple of minutes. Turn temp down and add bacon. Cook for a further 5 minutes. Take off the heat and put aside.
2. In a mixing bowl whisk eggs and add the milk and garlic powder. Season with salt and pepper.
3. Cut 9 rounds out of each sheet of pastry using a cookie cutter or glass (I used an 8cm sauce dish). Press pastry rounds into 12 hole cupcake pan. Spoon 1 teaspoon of onion/bacon mixture into each pastry round and then top with cheese. Using a ladle or spoon, add egg mixture into each pastry round until almost full.
4. Bake in oven for 20-25 minutes. Allow to cool before removing from pan.
