Potato & Bacon Soup



This soup is perfect for a cold night and it's budget friendly, too!

Potato & Bacon Soup
Serves 6


  • 4 large potatoes peeled and cubed
  • 1.5 litres of water
  • 500ml milk
  • 300g bacon diced
  • 4 garlic cloves crushed
  • 50g butter
  • 2 tablespoons plain flour
  • 2 teaspoons vegetable stock powder
  • Chopped fresh parsley for garnish (optional)

1. Melt butter in large pot over a medium heat and add onion, garlic and bacon. Fry for 5 minutes. Add flour and cook for a few minutes before whisking in the milk.
2. Pour in water, stock powder and potatoes. Place lid on and bring to boil. Simmer until potatoes are tender and falling apart. Serve with crusty bread and garnish with parsley.
