Salmon Cakes



 My kids love these salmon cakes. They have a delicious subtle lemony-dill flavour! Plus they are very budget friendly.

Salmon cakes
Makes 12 (approx.)

  • 1kg potatoes roughly chopped
  • 420g can pink salmon, drained and flaked (could use red salmon)
  • Salt and pepper to taste
  • 1 tablespoon chives chopped
  • 1 teaspoon dried dill
  • 2 spring onions finely chopped (optional)
  • Zest and juice of 1 lemon
  • 1 egg whisked
  • Oil for frying
  • Breadcrumbs


1. Boil potatoes until soft. Mash roughly.

2. Add salmon, herbs, salt, pepper, spring onion, lemon rind and egg to potatoes and stir.

3. Shape into patties and carefully coat in breadcrumbs. Allow to firm up in the fridge for upto 30 mins.

4. Heat vegetable oil in non stick frying pan on medium heat. Fry patties until golden. Serve with salad, lemon wedges and tartare sauce.
