San Choy Bow



My kids love this meal! It is super tasty, healthy and fast to make.

San Choy Bow
Serves 6-8

• 1kg lean mince (pork, chicken, beef)
• 200g vermicelli noodles
• 2 carrots grated
• 2 ribs of celery finely chopped
• 125g button mushrooms finely chopped
• 4 spring onions sliced (leave some aside for garnish)
• 4 cloves of garlic crushed
• 1/2 tablespoon minced ginger
• 2 tablespoons soy sauce/salt reduced soy sauce
• 2 tablespoons oyster sauce
• 12 Iceberg lettuce cups
• Black pepper
• Oil

1. Heat oil in frying pan and add ginger and garlic. Cook for a minute or two then add the mince. Cook mince until browned. In the meantime prepare vermicelli noodles per packet instructions.
2. Add the sauces and veges. Season with pepper. Stir until combined. Allow to simmer uncovered for approx 20 minutes stirring occasionally.
3. Once vermicelli has been soaked and drained cut them into shorter lengths using kitchen scissors. Add to mince mixture and use tongs to combine. Allow to cook for a further 3 minutes.
4. Spoon mince mixture into lettuce cups and garnish with spring onion, bean shoots and peanuts (optional).
