Spaghetti Meatballs

One of my favourite comfort meals. My kids love these meatballs, too. And it's another good recipe to hide vegetables in!

Spaghetti meatballs
Serves 8

  • 500g lean beef mince
  • 500g lean pork mince
  • 1 500g pack spaghetti
  • 1 large brown onion chopped
  • 4 garlic cloves crushed
  • 1 tablespoon mixed dried Italian herbs
  • 2 tablespoons chopped fresh basil
  • 1 sprig of rosemary
  • 2 teaspoons garlic powder
  • 1 cup water
  • Grated parmesan cheese (optional)
  • 1 1/2 cups bread crumbs
  • 2 eggs
  • 1 700g jar tomato passata
  • 2 tins of tomatoes
  • 1 tablespoon tomato paste
  • Olive oil
  • Salt and pepper

1. Combine minced meats, garlic powder, dried herbs, breadcrumbs, eggs, season with salt and pepper and mix with hands until well combined. Roll meatballs to desired size. Allow to firm up in fridge for at least 30 minutes.
2. Heat some oil in a frying pan and fry meatballs in two batches until Brown on all sides. Put aside. In the same pan fry onion for 5 minutes and then crushed garlic for a further 2 minutes. Add passata, tomato paste, tinned tomatoes, basil, rosemary sprig and water. Return meatballs to pan and allow to simmer gently uncovered for about an hour or until sauce has thickened.
3. Cook pasta per packet instructions.
4. Serve meatballs on top of pasta and sprinkle with parmesan cheese.

You could also serve with mashed potato. If you are feeding a crowd you could also serve with crusty bread and a simple salad.
