Beef Nachos



Another favourite in this house. You could also easily hide any grated veg in this dish.

Beef Nachos
Serves 6

  • 500g lean beef mince
  • 1 tablespoon ground paprika
  • 1/2 teaspoon chili powder
  • 3 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1 tin diced tomatoes
  • 1 tin corn kernels drained
  • 1 tablespoon tomato paste
  • 1 tin of black beans drained and rinsed
  • 1 onion roughly chopped
  • 1 cup water
  • 1 teaspoon massel beef stock powder
  • Salt and pepper
  • 2 170g bags of cornchips
  • 1 jar of salsa of choice
  • Sour cream
  • 1 1/2 cups grated cheese
  • 2 spring onions thinly sliced (optional)
  • Olive oil

1. Heat 1 tablespoon of olive oil in frying pan over medium high heat and saute onion until it starts to sweat.
2. Turn heat down and add paprika, chili powder, garlic powder, cumin and tomato paste. Fry for 2 minutes and add beef stock powder, water, tomatoes, corn and beans. Season with salt and pepper. Stir.
3. Bring to a simmer and allow to cook for 40 minutes, stirring occasionally.
4. Divide corn chips amongst plates and top with beef mince, salsa, cheese, sour cream and spring onions. Serve.

This can also be cooked on a sheet pan in the oven. Layer cornchips and beef mixture and top with salsa and cheese. Bake in a 200°c oven until cheese is melted. Serve with sour cream.
