Chicken Caesar Schnitzel Burgers

Chicken Caesar Schnitzel Burgers
Makes 6 burgers

  • 3 chicken breasts sliced into fillets (6 in total)
  • 2 cups panko breadcrumbs
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons garlic powder
  • 2 eggs whisked and in a shallow dish
  • 1 1/2 cups plain flour in a dish
  • 6 cos lettuce leaves halved
  • 6 hard boiled eggs thinly sliced
  • 6 short cut bacon rashers
  • Caesar dressing (I used Zoosh brand)
  • 1/4 cup shaved parmesan cheese
  • 6 burger buns

1. Preheat oven to 220°c (200° fanforced). Flatten chicken fillets with a meat mallet to make them even thickness. 
2. Combine panko crumbs, garlic powder and parsley in a dish. Season with salt and pepper. Coat the chicken breasts in flour, egg and then breadcrumbs. Place onto lined baking tray. Spray with oil. Bake in oven for 25 minutes turning once or until just golden.
3. Fry bacon and drain on paper towel. To assemble the burger put some caesar dressing on the top and bottom of the burger bun. Layer lettuce and egg on the bottom burger bun and top with halved chicken schnitzel, parmesan cheese, bacon and other half of burger bun. Serve.
