Oven Baked Popcorn Chicken

A healthier take on popcorn chicken. The panko crumbs give it a good crunch without deep frying.

Oven Baked Popcorn Chicken

  • 2 chicken breasts (approx 600g) cut into bite size pieces
  • 1 cup buttermilk
  • Salt and pepper
  • 1 1/2 cups panko breadcrumbs
  • 2 tablespoons cornflour
  • 3 teaspoons cajun seasoning
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon ground white pepper
  • Spray oil

1. Combine chicken pieces and buttermilk in a bowl and season with salt and pepper. Cover and allow to marinade for at least an hour.
2. Preheat oven to 200°c (180° fanforced). Drain chicken and put aside. Combine breadcrumbs, cornstarch, cajun seasoning, thyme, white pepper and garlic powder in a bowl. Season with salt. Coat chicken pieces in breadcrumbs and place onto a lined baking tray. Spray with oil
3. Bake in the oven for 20-25 minutes turning once. Serve with sauce of choice.
