Chili Con Carne

A classic chili con carne the whole family will love. I serve mine with sour cream and cornchips for something extra. You could also serve it with fresh salsa. Yum!

Chili Con Carne
Serves 6
  • 1/2 teaspoon chili powder (more or leas to taste)
  • 2 teaspoons cumin powder
  • 2 teaspoons ground paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 tin crushed tomatoes
  • 2 tablespoons tomato paste 
  • Salt and pepper for seasoning
  • 1 cup water
  • 1 teaspoon vegeta beef stock powder
  • 1 onion diced
  • 1 red capsicum diced
  • 1 can of red kidney beans drained and rinsed
  • 1 can of corn kernels drained and rinsed
  • 500g beef mince
  • Olive oil

1. Heat a small amount of olive oil in a frying pan over medium high heat and fry onion for 5 minutes. .Brown off mince. Stir in tomato paste and fry off for a couple of minutes before adding tinned tomatoes, capsicum, stock powder, water, chili, garlic, cumin, paprika, oregano, corn and beans. Season with salt and pepper.
2. Bring to a simmer and allow to cook uncovered for approx 45 minutes or until it has thickened, stirring every so often.
3. Serve with rice, sour cream, grated cheese and cornchips.
