Tuscan Chicken Pasta



A simple pasta made with just a handful of ingredients. Creamy and delicious without being too heavy. A new family fave here!

Tuscan Chicken Pasta
Serves 6
  • 600g chicken breasts cut into thin strips
  • 4 garlic cloves crushed
  • 1 brown onion chopped
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons chopped fresh thyme
  • Salt and pepper for seasoning
  • 300ml light thickened cream
  • 2 tablespoons grated parmesan + extra for garnish
  • 1 teaspoon vegeta chicken stock powder
  • 2 cups baby spinach
  • 1/2 cup sundried tomatoes chopped
  • 500g linguine
1. Heat a tablespoon of olive oil over medium high heat and saute onion for five minutes. Add the garlic and saute for a further two minutes then brown the chicken. Cook pasta according to packet instructions.
2. Reduce the heat and stir in the cream, stock powder, sundried tomatoes and season with salt and pepper. Allow to simmer gently for 10 minutes. Mix in the two tablespoons of parmesan. Add the spinach and allow to simmer for a further five minutes.
3. Add pasta to sauce and stir through. Garnish with parmesan cheese. Serve.
