Roast Tomato & Basil Soup


Roasting the tomatoes beforehand gives this soup a delicious depth of flavour. Super simple and easy to make. Another budget friendly family favourite.

Roast Tomato & Basil Soup
  • 1.2kg tomatoes halved
  • 1 large brown onion roughly chopped
  • 4 garlic cloves crushed
  • 1 tablespoon chopped fresh basil
  • 2 bay leaves
  • Salt and pepper for seasoning
  • 1 teaspoon vegeta veg stock powder
  • 4 cups of water
  • 3 tablespoons tomato paste
  • 1 teaspoon white sugar
  • Olive oil
1. Preheat oven to 200°c (180°c fanforced). Drizzle two tablespoons of olive oil over an oven tray and place tomatoes cut side down. Season with salt and pepper. Roast in oven for 25 minutes.
2. Heat 1 tablespoon of olive oil over a medium heat in a large pot and saute onion for 5 minutes. Add garlic and cook for a futher 2 minutes. Stir in tomato paste and bay leaves. Cook for a further 2 minutes before adding water, veg stock powder, sugar, basil and tomatoes. Season with salt and pepper. Bring to a simmer and cook for 20 minutes with lid on.
3. Take soup off of heat, remove bay leaves and blend with a hand held stick blender until smooth. Serve drizzled with cream and cheese toasties or crusty bread.
