Coriander Lime Chicken Kebabs

This recipe originally started as a chicken salad but I decided to make it into kebabs instead. The flavour of these is delicious and my kids loved them. If you don't like coriander you could use a different herb of choice.

Coriander Lime Chicken Kebabs
Serves 6

  • 1kg chicken breast cubed
  • Juice of 3 limes
  • Zest of 1 lime
  • 3 garlic cloves crushed
  • 2 tablespoons fresh coriander chopped (1/2 tblsp for garnish, optional)
  • 12 bamboo skewers
  • Salt and pepper for seasoning
  • Olive oil

1. In a bowl combine the lime juice, zest, garlic and coriander. Season with salt and pepper. In a larger bowl or container combine the cubed chicken and marinade. Wrap in cling wrap and allow to marinate in the fridge for at least one hour.
2. After marinating, thread chicken onto skewers.
3. Heat 1 tablespoon of olive oil on a grill pan or frying pan over a medium high heat and cook kebabs for approx 4 minutes each side, or until browned and cooked through. Garnish with coriander and lime wedges. Serve.
