Meatball Subs

These meatball subs were a huge hit and my kids raved about them! The meatballs are packed full of flavour and are complimented by the rich tomato sauce.

Meatball Subs
Makes 6
  • 500g lean beef mince
  • 3/4 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 tablespoon onion flakes
  • 3 teaspoons dried mixed italian herbs
  • Salt and pepper for seasoning
  • 1 egg lightly whisked
  • 1 cup grated tasty cheese
  • 1/2 cup grated parmesan cheese
  • 6 long bread rolls split, but not all the way through
  • Olive oil

For the sauce
  • 1 jar tomato passata
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (1/2 tablespoon reserved for garnish, optional)
  • Salt and pepper
  • Splash of water

1. In a mixing bowl combine mince, breadcrumbs, egg, italian herbs, garlic and onion flakes. Season with salt and pepper. Roll into 30 small equal sized balls. Allow to firm up in the fridge for at least 30 minutes.
2. Preheat oven to 220°c (200° fanforced). Heat 1 tablespoon of olive oil in a deep frying pan or pot over a medium high heat and brown meatballs on all sides.
3. Reduce heat and add passata, garlic powder, parsley and splash of water to meatballs. Stir carefully making sure to not break up any meatballs. Allow to simmer gently for 25 minutes.
4. After 25 minutes, place five meatballs into each bread roll, finishing with a drizzle of sauce over the top. Place in a large rectangular casserole dish (may need to use two) and sprinkle subs evenly with the cheeses.
5. Bake in the oven for 12 minutes or until cheese is melted. Garnish with parsley and serve with chips or potato wedges.
