Strawberry White Choc Muffins



Strawberry White Choc Muffins
Makes 12 regular muffins

  • 2 cups self raising flour
  • 1 cup of milk
  • 2 eggs lightly whisked
  • 100g unsalted butter melted
  • 3/4 cup brown sugar
  • 250g punnet strawberries cut into small chunks
  • 200g white chocolate chips
  • 1 teaspoon vanilla essence

1. Preheat oven to 200°c celsius (180° fanforced). Combine flour, sugar and choc chips in a mixing bowl. In a jug whisk together milk, eggs, butter and vanilla essence.
2. Make a well in the flour and pour in wet mix and strawberries. Fold in until just combined.
3. Distribute mixture among a 12 hole muffin pan. Bake in oven for 20 minutes or until just golden and cooked through.
