Mince & Veg Macaroni



This dish is great for hiding veg. This recipe makes enough to feed a crowd and tastes great the next day.

Mince & Veg Macaroni
Serves 8-10
  • 500g macaroni
  • 500g lean beef mince
  • Salt and pepper
  • 1/2 tablespoon chopped fresh rosemary
  • 1 tin tomatoes
  • 2 tablespoons tomato paste
  • 1 700g bottle tomato passata
  • 1 brown onion diced
  • 1 teaspoon vegeta beef stock powder
  • 3 cloves garlic crushed
  • 1 zucchini grated
  • 2 carrots peeled and grated
  • 1 red capsicum finely diced
  • 2/3 cup water
  • A pinch of sugar
  • 1/2 cup grated tasty cheese
  • Olive oil
1. Heat 1 tablespoon olive oil in a deep frying pan or pot over medium high heat. Add onion and saute for 5 minutes. Add garlic and fry for a further two minutes before browning the mince. Stir in tomato paste and rosemary and cook for a minute or two.
2. Add water, passata, veg, sugar, stock powder, tin tomatoes, season with salt and pepper and stir. Reduce heat and allow to simmer with the lid on for 25 minutes, stirring occasionally.
3. In the meantime boil the macaroni and put aside.
4. Combine sauce with macaroni. Serve and sprinkle with cheese.
