Tropical Muffins



A yummy combination of pineapple, passionfruit and coconut.

Makes 14 Regular Sized Muffins

  • 2 cups self raising flour
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cup milk
  • 1/3 cup caster sugar
  • 1/3 cup + 1 tablespoon shredded coconut
  • 1 440g tin crushed pineapple drained
  • 170g tin passionfruit pulp

1. Preheat oven to 200°c (180°c fanforced). In a mixing bowl combine flour, sugar and 1/3 cup coconut. In another bowl whisk together the eggs and milk. Pour into dry ingredients. Add pineapple, passionfruit and butter and stir until just combined.
2. Distribute amongst muffin cases. Sprinkle with coconut. Bake in oven for 20-25 minutes or until just golden.
3. Allow to cool before serving.
