Chicken Pasta Bake



Chicken Pasta Bake
Serves 6-8
  • 500g penne pasta
  • 500g chicken breast cut into small cubes
  • 150g bacon diced
  • 1 brown onion diced
  • 1 red capsicum cubed
  • 3 garlic cloves crushed
  • 1 tin tomatoes
  • 1 700g bottle tomato passata
  • Black pepper for seasoning
  • 1 tablespoon mixed dried italian herbs
  • 1 cup grated tasty cheese
  • Olive oil
1. Preheat oven to 200°c (180°c fanforced). Heat 1 tablespoon of olive oil in a deep frying pan over medium high heat and saute onion for 5 minutes. Add garlic, bacon and chicken and cook until chicken is browned on all sides.
2. Pour in passata, tinned tomatoes, herbs, capsicum and season with black pepper. Stir and reduce heat and allow to simmer for 25 minutes
3. In the meantime boil penne as per packet instructions.
4. Combine penne with sauce and place into a rectangular baking dish. Sprinkle with cheese and bake in oven for 20 minutes or until cheese is just golden. Serve.
