Coconut Chicken Curry

An easy and budget friendly chicken curry. Mild enough for the whole family to enjoy.

Coconut Chicken Curry
Serves 8

  • 1kg chicken thigh fillets cubed
  • 1 can full fat coconut milk
  • 1/2 cup of water
  • 1 1/2 tablespoons Keens curry powder
  • 2 cloves garlic crushed
  • 2 teaspoons minced ginger
  • 2 carrots peeled and chopped
  • Salt for seasoning
  • Olive oil

1. Heat a tablespoon of oil in a pot over medium-high heat and fry curry powder until fragrant. Add garlic and ginger and saute for another minute or two. Brown chicken before adding coconut milk, carrots and water. Season with salt and stir.
2. Reduce heat and allow to simmer with the lid on for 30 minutes, stirring occasionally. Take the lid off for the last 10 minutes.
3. It's ready when the carrots are tender. Serve with rice.
