Mexican Meatloaf



Mexican herbs and spices are combined to make this yummy meatloaf. Simple and easy to prepare.

Mexican Meatloaf
Serves 6-8

  • 1kg beef mince
  • 1 small red capsicum diced
  • 1 small brown onion finely diced
  • 1 tablespoon garlic powder
  • 1/2 tablespoon cumin
  • 2 teaspoons smoked paprika
  • A pinch of chili powder
  • 2 tablespoons tomato paste
  • Salt and pepper
  • 1 tablespoon chopped fresh oregano
  • 1 egg
  • 1 cup breadcrumbs
  • 1/2 cup salsa
  • 1/2 cup grated tasty cheese
  • Spray oil

1. Preheat oven to 200°c (180°c fanforced). In a bowl combine mince, onion, capsicum, herbs and spices, tomato paste, egg and breadcrumbs. Season well with salt and pepper. Do not overmix as it will become tough. Spray a loaf tin with oil and press mince mixture into tin. Bake in oven for 50 minutes.
2. After 50 minutes spread salsa over the top and sprinkle with cheese. Cook for a further 25 minutes.
3. Allow to rest for at least 10 minutes before slicing.
