Sweet Potato & Ham Frittata



A perfect midweek meal the whole family will love. It also tastes great the next day.

Sweet Potato & Ham Frittata
Serves 6-8

  • 600g sweet potato cut into small cubes
  • 200g smoked ham chopped
  • 1 cup grated tasty cheese
  • 3 spring onions thinly sliced, white and pale green parts only
  • 2 teaspoons garlic powder
  • 8 large eggs whisked
  • 1 tablespoon fresh parsley chopped
  • 1 cup milk
  • Salt and pepper for seasoning
  • Olive oil

1. Preheat oven to 200°c (180°c fanforced). Place sweet potato on a roasting tray and drizzle with 1/2 a tablespoon of olive oil. Season with salt and pepper and toss. Roast in oven for 25 minutes.
2. Combine eggs, garlic powder and milk in a bowl. Season with salt and pepper. Put aside.
3. Once potatoes are cooked, place on the bottom of a large lined rectangular baking dish. Add ham and then sprinkle spring onion and cheese on top. Mix slightly to make sure all ingredients are evenly distributed. Pour over egg mixture. Bake in oven for 40 minutes or until set. Allow to sit for 10 minutes before slicing.
