Chicken Schnitzel Turkish Rolls



These rolls are easy to make and are super tasty.

Chicken Schnitzel Turkish Rolls
Serves 6

  • 6 turkish rolls halved
  • 3 chicken breasts filleted and flattened with a meat mallet
  • 2 1/2 cups panko breadcrumbs
  • Salt and pepper
  • 2 eggs
  • 1/2 cup plain flour
  • Olive oil for frying
  • 1 garlic clove crushed
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon lemon juice
  • 3/4 cup whole egg mayo
  • 6 cos lettuce leaves
  • 200g Swiss cheese slices

1. In a bowl combine mayonnaise, lemon juice, parsley and garlic clove. Season with black pepper. Allow to sit in fridge for at least a hour.
2. Season breadcrumbs with salt and pepper. Dip chicken fillets in flour, egg, then breadcrumbs. Place in fridge for at least 30 minutes before frying.
3. Preheat oven to 180°c. Heat a good amount of olive oil over medium high heat in a frying pan and fry schnitzels for 3-4 minutes each side or until golden. Drain on paper towel.
4. In the meantime warm up turkish rolls in oven for 10 minutes.
5. Spread a small amount of aoili on the bottom of each turkish roll. Top with one cos lettuce leaf, chicken schnitzel and slice of Swiss cheese. Serve.
