Greek Chicken Tray Bake
Serves 6

A delicious and simple tray bake packed full of fresh flavours of the Mediteranean.

  • 3 large chicken breasts filleted
  • 800g baby red potatoes cut into small cubes
  • 1 small red capsicum cubed
  • 1 punnet cherry tomatoes
  • 200g kalamata olives halved
  • 2 tablespoons fresh oregano chopped, plus extra for garnish (optional)
  • 4 garlic cloves crushed
  • Juice of 3 lemons
  • Olive oil
  • Salt and pepper

1. In a bowl combine lemon juice, one tablespoon of olive oil, garlic and oregano. Season with salt and pepper. Place chicken fillets in a shallow dish and coat in marinade. Allow to marinade for upto two hours.
2. Preheat oven to 210°c (190°c fanforced). Place potatoes in a large rectangular roasting dish or sheet pan and coat in one tablespoon olive oil. Season with salt and pepper. Roast in oven for 30 minutes, turning once.
3. Add capsicum, olives and cherry tomatoes to roasting dish. Place chicken amongst the veg. Cook in oven for a further 25-30 minutes or until chicken is cooked through. Garnish with extra chopped oregano and serve with breadrolls.
