Pesto Chicken Pasta

A quick, simple and delicious mid week meal the whole family will love.

Pesto Chicken Pasta
Serves 8
  • 500g penne pasta
  • 600g chicken breast cubed
  • 3 garlic cloves crushed
  • 190g jar of Coles basil pesto
  • 300ml light thickened cream
  • A splash of water
  • 1 teaspoon Vegeta chicken stock powder
  • 1 cup green peas
  • 2 cups baby spinach leaves
  • Black pepper for seasoning
  • 2 tablespoons grated parmesan cheese
  • Olive oil

1. Add a small amount of oil to a frying pan over a medium high heat and add garlic and chicken. Brown chicken on all sides before adding the cream, splash of water, pesto and chicken stock powder. Season with black pepper. Allow to simmer for 5 minutes before adding the peas. Simmer for a further 10 minutes.
2. In the meantime boil pasta per packet instructions.
3. After 10 minutes add spinach to chicken and simmer for a further two minutes.
4. Combine pasta with chicken and stir to combine. Serve sprinkled with parmesan cheese.
