Potato Salad


This potato salad is great for feeding a crowd and is full of flavour. This is my go to recipe every time we have a BBQ and it's a huge hit.

Potato Salad
Serves 8+

  • 1.5kg potatoes cubed
  • 3 spring onions thinly sliced
  • 300g bacon diced, fried off and drained on paper towel
  • 6 hard boiled eggs chopped
  • 3 tablespoons capers chopped
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh mint chopped
  • 1 cup whole egg mayo
  • 1/2 cup sour cream
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons white vinegar
  • Black pepper for seasoning

1. Boil potatoes until just soft. Rinse under cold water and allow to cool off in fridge.
2. In a bowl combine mayo, sour cream, mustard, vinegar, mint, parsley and capers. Season with black pepper.
3. In a salad bowl combine potatoes, spring onion, bacon and eggs. Pour dressing over and gently toss until coated. Garnish with extra parsley and spring onion (optional).
