Tex Mex Chicken Salad

An easy Tex Mex inspired salad perfect for hot nights.

Tex Mex Chicken Salad
Serves 8

  • 1/2 an iceberg lettuce shredded
  • 4 tomatoes diced
  • 1/2 red onion finely diced
  • 1 tin corn kernels
  • 1 tin black beans rinsed
  • 1 cup grated tasty cheese
  • 1 cup crushed corn chips of choice
  • 1 tablespoon chopped fresh coriander or parsley
  • 3 chicken breasts filleted
  • 1 tablespoon ground paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • Salt and pepper
  • Olive oil
  • 1/2 cup Paul Newman chipotle ranch dressing, or regular ranch dressing

1. Place chicken fillets in a bowl and drizzle with a tablespoon of olive oil and coat in paprika, garlic powder and cumin. Toss to combine. Season with salt and pepper. Grill on BBQ or griddle pan over a medium high heat until cooked all the way through. Allow to cool then cut into cubes.
2. Combine lettuce, corn, beans, onion, cheese, tomatoes, coriander and cornchips in a salad bowl. Add chicken and dressing and toss to combine.
3. Sprinkle with extra crushed cornchips and serve.
