Cheesy Bolognese Pasta Bake

An easy, budget friendly dinner even fussy eaters will love.

Cheesy Bolognese Pasta Bake
Serves 8

  • 500g beef mince
  • 500g pasta spirals
  • 1 brown onion chopped
  • 3 garlic cloves crushed
  • 2 tablespoons fresh basil chopped
  • 1/2 tablespoon fresh rosemary chopped
  • 1 carrot peeled and grated
  • 1 cup sliced mushrooms
  • 1 700g jar tomato passata
  • 1 tin tomatoes
  • 1 cup mozzarella cheese
  • 1 1/2 cups grated tasty cheese
  • 2 tablespoons tomato paste
  • 1 teaspoon vegeta beef stock powder
  • Salt and pepper for seasoning
  • Olive oil

1. Preheat oven to 200°c (180°c fanforced). Heat a tablespoon of olive oil over a medium high heat and saute onions for 5 minutes. Add garlic and cook for a further couple of minutes before frying off tomato paste. Increase heat and brown beef mince.
2. Pour in passata, tin of tomatoes, basil, rosemary, beef stock powder, carrot and mushrooms. Season with salt and pepper and stir. Reduce heat and allow to simmer for 30 minutes.
3. In the meantime cook spirals per packet instructions.
4. Combine spirals and meat sauce in a large baking dish. Stir through the mozzarella and top with grated tasty cheese.
5. Bake in oven for 25 minutes or until cheese is melted and bubbling. Allow to sit for 10 minutes before serving.
