Chocolate Chip Muffins



A classic lunchbox favourite, my kids request these muffins all the time. These freeze really well too, although, they don't last very long in this household.

Chocolate Chip Muffins
Makes 12 regular sized muffins

  • 2 cups self raising flour
  • 1 cup milk
  • 2/3 cup caster sugar (could add less if preferred)
  • 1/3 cup veg oil
  • 2 eggs whisked 
  • 1 bag Cadbury milk choc chips
  • 1 teaspoon vanilla essence

1. Preheat oven to 200°c (180°c fanforced). In a bowl combine dry ingredients. In a seperate bowl combine eggs, oil, milk and vanilla essence. Combine wet ingredients with dry ingredients and mix until just combined.
2. Distribute amongst patty pans until 2/3 the way full. Bake in oven for 20-25 minutes.
3. Allow to cool slightly before serving.
