Chorizo Pasta

This dish is simple yet super tasty. This recipe is pretty versatile, you could use up any veg you have on hand.

Chorizo Pasta
Serves 6-8

  • 500g penne
  • 225g Spanish chorizo thinly sliced (I used the Berg brand from Aldi)
  • 1 red capsicum cubed
  • 2 tins crushed tomatoes
  • 1 brown onion chopped
  • 3 garlic cloves crushed
  • 1 teaspoon Vegeta chicken stock powder
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 tablespoon chopped fresh (or dried) oregano
  • Salt and pepper for seasoning
  • Olive oil

1. Boil penne per packet instructions and put aside. Heat half a tablespoon of olive oil in a frying pan over medium high heat and saute onion for 5 minutes. Add the chorizo and fry for a further 5 minutes.
2. Add tomato paste, garlic and oregano and fry for 2 minutes before stirring in tinned tomatoes, stock powder, capsicum and water. Season with salt and pepper. Simmer for 25 minutes.
3. After 25 minutes stir sauce through pasta. Serve.
