Apple & Cinnamon Muffins



Apple & Cinnamon Muffins
Makes 12


  • 2 cups self raising flour
  • 3/4 cup brown sugar (could add less if preferred)
  • 2 granny Smith apples peeled, cored and chopped
  • 1/2 cup milk
  • 1/3 cup veg oil
  • 2 eggs whisked
  • 2 1/2 teaspoons ground cinnamon

Topping
  • 2 tablespoons plain flour
  • 2 tablespoons brown sugar
  • 2 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 15g unsalted butter at room temp


1. Preheat oven to 200°c (180°c fanforced). Combine wet ingredients in a bowl. In another bowl combine dry ingredients. Pour wet ingredients and chopped apple into dry and stir until just combined. Distribute amongst a 12 hole muffin pan.
2. For the topping: In a bowl combine plain flour, cinnamon, brown sugar, caster sugar and butter. Rub butter into dry ingredients with fingertips or combine with a fork, until it starts to clump together. Distribute evenly on top of muffins. Bake in oven for 20 minutes.
3. Allow to sit for 10 minutes before serving. These freeze really well.
