Creamy Lemon Garlic Chicken

This was a huge hit with my family. It is so simple, only uses a few ingredients, yet the sauce is packed full of flavour.

Creamy Lemon Garlic Chicken
Serves 6

  • 3 large chicken breasts (approx 300g ea), filleted
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 lemon, sliced for garnish (optional)
  • 6 cloves garlic, crushed
  • 300ml light thickened cream
  • 1/4 cup water
  • 1/4 cup plain flour
  • 1 teaspoon vegeta chicken stock powder
  • 1 tablespoon chopped fresh parsley, + extra for garnish (optional)
  • Olive oil
  • Salt and pepper for seasoning

1. Season chicken with salt and pepper on both sides and dust in flour. Heat 1/2 tablespoon of oil in a frying pan over high heat and fry chicken fillets for 3 minutes each side. Put aside.
2. Reduce heat in frying pan and add another small amount of oil. Fry garlic for a minute then add cream, water, lemon juice, lemon zest, chicken stock powder and 1 tablespoon of parsley.
3. Place chicken fillets into pan and allow to simmer gently for 20 minutes, turning once. Once chicken is cooked all the way through, sprinkle with extra parsley and serve with lemon slices. Serve with veg, rice, pasta or mash.
