Caramel Swirl Banana Muffins




Caramel Swirl Banana Muffins
Makes 12

These muffins were a treat and a great way to use up over ripe bananas. You could add less sugar if preferred.

  • 2 cups self raising flour
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 2/3 cup caster sugar
  • 140g Nestle Top n Fill Caramel
  • 2 eggs whisked
  • 4 large over ripe bananas mashed

1. Preheat oven to 200°c (180° fanforced). Combine eggs, milk and oil in a jug then stir in mashed banana. In a mixing bowl combine flour and sugar. Combine wet ingredients with dry and stir until just combined.
2. Distribute batter amongst a 12 hole muffin pan, approx 2/3 of the way full. Dollop 2 teaspoons of caramel on top of each muffin. Use a skewer to swirl the caramel into the batter. Bake in oven for 20-25 minutes.
3. Allow to cool before serving as the caramel will be very hot.
