Chinese Soy & Ginger Chicken



This dish is packed full of flavour and budget friendly.

Chinese Soy & Ginger Chicken
Serves 6

  • 800g chicken breast cut into strips
  • 1 red capsicum cut into thin strips
  • 2 tablespoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons minced ginger
  • 2 teaspoons crushed garlic
  • 1/2 teaspoon Chinese five spice
  • Vegetable oil
Marinade
  • 1 tablespoon light soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon crushed garlic
  • 1 teaspoon minced ginger
  • black pepper for seasoning

1. Combine marinade ingredients and season with pepper. Place chicken strips into a shallow dish and combine with marinade. Allow to marinade for upto a day, or for at least a hour.
2. In a bowl combine dark soy, tablespoon rice wine vinegar, cornstarch, ginger, garlic and Chinese five spice. 
3. Heat a small amount of oil in a wok or frying pan over a high heat and Brown chicken on all sides. Add capsicum and stirfry for a further two minutes before pouring in sauce. Allow to bubble rapidly for a couple of minutes before reducing the heat slightly and cooking for a further five minutes, or until chicken is cooked through.
4. Serve with rice.
