Chicken & Parmesan Sausage Rolls
Makes 32

  • 1kg chicken mince
  • 4 sheets ready rolled puff pastry
  • 1 cup breadcrumbs
  • 1 egg
  • 1 small brown onion finely chopped
  • 1 carrot peeled and grated
  • 1 small zucchini grated
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon tomato sauce
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • Salt and pepper for seasoning
1. Preheat oven to 200°c (180°c fanforced). Combine chicken mince, onion, egg, grated veg, basil, garlic powder, breadcrumbs and tomato sauce. Season with salt and pepper.
2. Slice thawed pastry sheets down the middle. Distribute mince mixture amongst pastry halves, shaping into 1 1/2 inch sausages. Roll pastry over to encase mixture, seam side down. Slice into fours and place onto a lined baking sheet.
3. Bake in oven for 25-30 minutes or until puffed and golden. Allow to cool slightly before serving.
