Slow Cooker Beef & Barley Stew


A comforting meal for a cold night. This is a new fave in my household.

Slow Cooker Beef & Barley Stew
Serves 6

  • 1.2kg chuck steak cubed
  • 4 cups of water
  • 1 cup pearl barley
  • 1 cup frozen pea and corn mix, thawed
  • 1 tin crushed tomatoes
  • 1/4 cup tomato paste
  • 1 brown onion roughly chopped
  • 4 garlic cloves crushed
  • 3 carrots peeled and sliced
  • 3 celery stalks sliced
  • 1 punnet button mushrooms sliced
  • 3 bay leaves
  • 3 sprigs of thyme
  • 1 tablespoon Worcestershire sauce
  • 3 teaspoons vegeta beef stock powder
  • Salt and pepper for seasoning

1. Place all ingredients into the slow cooker, apart from the peas and corn. Season with salt and pepper. Cook for 6-8 hours on low, depending on your slow cooker. Stir halfway.
2. Stir in peas and corn 1 hour before cooking time is up.
3. It's done when meat and veg are tender. Serve with crusty bread.
