Slow Cooker Pork Carnitas



This is a new family favourite. Requires minimal prep but is packed full of flavour. This also freezes really well.

Slow Cooker Pork Carnitas
Serves 10+

  • 2kg pork shoulder roast, rind removed
  • 1 brown onion chopped
  • Juice of 2 limes
  • 1/2 tablespoon fresh coriander or parsley chopped
  • Salt and pepper for seasoning

Dry Rub
  • 2 tablespoons dried oregano
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 2 teaspoons chicken stock powder
  • 1/2 teaspoon chili powder


1. Combine dry rub ingredients. Coat pork in dry rub and place in slow cooker with onion, coriander and lime juice. Season with salt and pepper. Cook on low for 8-10 hours, depending on your slow cooker. Turn over half way.
2. Shred pork with two forks. Serve with lime wedges and fresh chili.

Serve on wraps, tacos, rolls, nachos or with salad.
