Slow Cooker Porcupine Meatballs

Slow Cooker Porcupine Meatballs
Serves 8

  • 1kg lean beef mince
  • 1 cup cooked white rice
  • 1 cup water
  • 1 tin condensed tomato soup
  • 1 tin crushed tomatoes
  • 1 small brown onion finely diced
  • 1/2 cup breadcrumbs
  • 4 teaspoons garlic powder
  • 3 teaspoons dried Italian herbs
  • 1 egg
  • Pepper for seasoning
  • Chopped fresh parsley for garnish (optional)
  • 2 teaspoons cornstarch dissolved in a small amount of water (optional)

1. Combine mince, onion, 2 teaspoons of garlic powder, italian herbs, breadcrumbs, egg and rice. Season with pepper. Shape into large meatballs.
2. In the slow cooker combine tin tomatoes, tomato soup, water and 2 teaspoons of garlic powder. Carefully place the meatballs in. Cook on low for 4-6 hours, depending on your slow cooker.
3. Gently stir in cornstarch mixture for the last 30 minutes of cooking. Serve with mash, pasta or rice.
