White Chocolate & Raspberry Muffins



Tart raspberries mixed with sweet white chocolate make the perfect classic flavour combo.

White Chocolate & Raspberry Muffins
Makes 12

  • 1 3/4 cup self raising flour
  • 1 cup frozen raspberries
  • 1 pack Cadbury white choc chips
  • 2/3 cup caster sugar (could add less if preferred)
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla essence

1. Preheat oven to 200°c (180°c fanforced). Combine wet ingredients in a mixing bowl and whisk together. Add dry ingredients to wet ingredients and stir in until just combined.
2. Distribute mixture amongst a 12 hole muffin pan. Bake in oven for 20-25 minutes.
3. Allow to cool before serving.
