Broccoli Cheese Soup

Broccoli Cheese Soup
Serves 6
  • 2 heads of broccoli, cut into small florets
  • 3 cups of milk
  • 3 cups of water
  • 2 cups grated tasty cheese, plus extra for garnish
  • 1/4 cup plain flour
  • 1 brown onion chopped
  • 3 teaspoons crushed garlic
  • 1 carrot peeled and grated
  • 50g butter
  • 2 teaspoons vegetable (or chicken) stock powder
  • 2 bay leaves
  • Salt and pepper for seasoning

1. Melt butter in a large pot over medium high heat and saute onion for 5 minutes. Add in garlic and saute for a further minute before adding flour. Fry for a further 2 minutes. Slowly add water and milk, stirring as you go.
2. Add stock powder, broccoli, grated carrot, bay leaves and season with salt and pepper. Reduce heat and allow to simmer gently with the lid on for 25 minutes.
3. After 25 minutes remove bay leaves and using a stick blender, blend soup to desired consistency (I left mine quite chunky). Stir through grated cheese and allow to melt. Serve with crusty bread.
