Cashew Chicken



This was so good and easy to make. All the kids loved this meal.

Cashew Chicken
Serves 6
  • 1.2kg chicken thigh fillet cubed
  • 1 red capsicum cubed
  • 1 green capsicum cubed
  • 1 brown onion sliced into half moons
  • 1 cup roasted cashews
  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons cornstarch
  • 3 teaspoons minced garlic
  • 2 teaspoons sesame oil
  • Pepper for seasoning


1. In a bowl combine soy sauce, oyster sauce, rice wine vinegar and cornstarch. Put aside.
2. Heat one teaspoon of sesame oil in a large pan or wok over a medium high heat and fry onion for two minutes. Increase heat and add another teaspoon of sesame oil and add in garlic, capsicum and chicken. Brown on all sides and season with pepper.
3. Stirfry for a further two minutes before pouring in sauce mix. Allow to bubble for a further 5 minutes, or until it starts to thicken, stirring frequently. Stir through cashews for the last couple of m minutes. It is done when chicken is cooked all the way through and capsicum is tender.
4. Serve with rice.
