Creamy Salmon Penne

Creamy Salmon Penne
Serves 8
  • 500g penne
  • 600ml light thickened cream
  • 2x 415g tins pink salmon drained*
  • 3 cups of broccoli florets
  • 1 brown onion diced
  • Juice of 2 lemons
  • Zest of 2 lemons
  • 1 cup green peas
  • 4 garlic cloves crushed
  • 1 1/2 teaspoons dried dill
  • Salt and pepper
  • Olive oil
  • Fresh chopped parsley for garnish
*Could use cooked and flaked salmon fillets but it will be dearer.

1. Boil penne per packet instructions and put aside. Boil broccoli and peas until tender and put aside with the penne.
2. In a frying pan heat a small amount of olive oil over a medium heat and fry onion for five minutes. Add garlic and fry for a further two minutes. Stir in cream, lemon juice, lemon zest, dill and season with salt and pepper. Simmer for five minutes or until it has thickened slightly. Stir in salmon and take off the heat.
3. Combine sauce with penne, broccoli and peas. Garnish with parsley and serve.
