Minestrone Soup



Minestrone Soup
Serves 6-8

  • 5 cups of water
  • 2 tins diced tomatoes
  • 3 cups baby spinach
  • 2 cups frozen cut green beans
  • 1 1/2 cups dry short pasta (shells, orriechette)
  • 1 can cannelini beans drained
  • 1 can red kidney beans drained
  • 1 onion diced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 4 garlic cloves crushed
  • 3 teaspoons beef (or veg) stock powder
  • 2 rosemary sprigs
  • 10 basil leaves roughly torn
  • 2 bay leaves
  • Salt and pepper for seasoning

1. Heat a small amount of Olive oil in a large pot over high heat and saute onion for 5 minutes. Add garlic and saute for a further couple of minutes before adding celery and carrot. Saute for a further couple of minutes then add rosemary and basil leaves.
2. Pour in beans, water, tinned tomatoes, stock powder and bay leaves. Season with salt and pepper and stir. Place lid on, reduce heat and allow to simmer for 25 minutes on low.
3. After 25 minutes add green beans and bring back to the boil before adding pasta. Boil pasta per packet instructions with the lid off.
4. Turn the heat off and stir in baby spinach leaves. Remove bay leaves and serve.
